Pat Parmele was the driving force behind the food service department at Union College in Lincoln, Nebraska from 1985 to 2009 when she retired. While under her watch, Pat grew the business from a small food service for on-campus students and staff, to a well-respected, all-vegetarian catering service, retail bakery, and local vegetarian eatery for the community and students alike.
